I strongly feel that it is important for you to work together with the regular teacher to jointly develop effective writing assignments for your students. My suggestion would be for you to consider creating writing assignments based on the interests of your ESL students. That way, they will be motivated to write. Also, at the very beginning, I would suggest that you focus more attention on content that actual grammar/punctuation so that the students will feel comfortable in writing.
