Thanks for the warnings and advice, which shook me a bit. I was, in terms of the teaching and the job only actually worried about my teaching abilities but I have been honest with the school and explained to them that the only teaching I have done was for three months teaching foreign trainee chefs a few years ago with such relevant vocabulary like, roasted slowly, braised, simmered not boiled and Good Morning, Chef. The Chinese person who has hired me was very reassuring and said that if I did make any mistakes in English the Chinese students wouldn't know anyway. So my inexperience won't be a problem. But what you say could be a problem. Too late now I fear, I have arranged to sell my gazebo, informed the market inspector, and told all the regular market folk that I am off to China. I have even given notice to my my landlord. So I had better do it.
