'Whose book is that?' is still referring to 'who/whom', ie, a PERSON rather than an inanimate object.
'To whom does that book belong?' 'Who is the owner of that book?' etc etc.
Likewise with 'which'.
To say 'Whose book is the one whose cover is red?' just sounds wrong to me.
