We don't all teach "Oral English." That's an often misrepresented assumption on your part because apparently it's all you've ever been asked to teach at the private schools you apparently bless with your presence.
No, most colleges at most universities in China offer a variety of English related subjects and try to fill the vacancies for those positions with qualified teachers. Moreover, many foreign teachers, shockingly - you might believe, are asked to teach grammar. Aside from that, there are even universities where academic excellence is the norm and creative teaching on the part of foreign teachers is not only encouraged but rewarded.
