I, too, decided to go and teach in China, so I just send a bunch of emails. I got an answer as soon as 3 hours later! They were all happy to have me (which is never likely the case, but this is China, they must need like a million teachers there).

In my case, as well, they told me that I could go with a tourist Visa and then change it to the Z one... Hm... A country that allows tourists to work? That is great. But I thought it was fishy, so i googled... and here I am. So, after reading you all, I am not going to just fall in. If I am to be expelled from the country, I'd better stay put.
