I am a US Citizen. I had not issues with the embassy in HK. Next day service WAS an option for me AND I took it AND I was going for a Z-Visa.

If you go to the embassy on Friday, I can almost guarantee it will be quite empty. When I went back on Monday (same time that I went on Friday) to pick up my passport with visa, there was a huge queue outside. However, the whole process to pick up the visa on Monday was extremely quick, as most people who were there on Monday were going to apply for the visa, not really to pick up visa. So as soon as I got up to the 3rd floor (where they do all the visa stuff,) I got my ticket, I was called in less than 30 seconds, I paid, waited 1 minute and was called again to pick up my passport. If it was not for the 25 minute queue outside, I would have been out of the embassy in record time, less than 3 minutes! I think Thursday would not be bad either.

As far as "Visa Runs" are concerned, I can almost say that if you are a US citizen with a job in Beijing, have the work permit/invitation letter stating HK on it, you can do this in 2 days, only having to stay one night. Of course, if you have the medical check already from China or you get into HK early with an appointment already made, and having taken the exam previously in China or another country, it is definitely doable.
