I spoke with a representative from a Chinese Consulate in the U.S. earlier today and was told to not worry about it, they can issue a new Z visa (as long as I have the necessary documents ready from the new employer that has hired me), just like you mentioned in your post. It sounds like everything is so far stepping out in the right direction.
