The Chinese "assistants" they hire are atrocious. I have yet to meet more contrary, self important "assistants" in my entire life. Never have a had someone argue with me more, and try to run things when they are "my" assistant. I have yet to work with such contrary people so closely.

I do not think what you have written about the Chinese teaching assistants working for the good doctor's school is accurate.
Actually, in the main they are charming young girls who have recently graduated as English majors from the local university. Most of them are the daughters of poor farmers or poorly-paid factory hands. There are some beautiful girls among them who can be swept off their feet by a handsome foreign teacher. It's a pity that the good doctor pays them so little, and that their accommodation is so bad. Also that they are required to work much longer hours than the foreign employees they assist, and that they must submit a teaching report for each and every lesson they observe being taught. They deserve our sympathy, not our criticism!
